Classic Vietnamese beef pho soup

Pho is a classic Vietnamese dish that originated in the early 1900’s. It’s a delicious, healthy and easy to prepare meal that’s great to eat no matter what time of year. For this recipe we suggest using beef eye fillet that is very thinly sliced, but you can also use beef meat balls, beef brisket, vegetables or seafood. This is a recipe that’s easy to make, so even if your cooking skills are basic this is a good meal to try. It’s also a pretty quick meal to make with the preparation and cooking time approximately 30 -40 minutes. Once made this is not suitable to freeze.Here are a list of the ingredients you will need for this recipe:300g beef eye fillet, very thinly sliced (should be paper thin as it is cooked in the beef stock when served)
375g flat rice noodles (make sure they are not the very thin rice vermicelli they should be about the size of linguine)
1 onion, thinly sliced
1/3 cup of basil
2L beef stock (stock cube is fine)
1/3 cup mint
3 star anise
1/3 cup coriander leaves, to serve
2 tbs caster sugar
1/3 cup fish sauce
1 cup (80g) bean sprouts
2 cinnamon quills, lightly bruised
2 thick slices ginger
1 long red chilli, seeds removed, thinly sliced
2 garlic cloves, sliced
2 limesOnce you have the ingredients ready then here are the steps for making the soup:1. Place stock and 2 cups (500ml) water in a saucepan with ginger, onion, garlic, star anise, cinnamon, sugar and fish sauce. Bring to the boil, and then reduce heat to low. 2. Cover and simmer for 20 minutes.
3. Strain, discarding solids, then return soup to pan. Cover and return to the boil.
4. Meanwhile, prepare noodles according to packet instructions. Drain well.
5. Divide the warm noodles among warmed soup bowls, then top with the sliced beef fillet. Pour over the hot soup mixture, taking care that the soup is boiling hot (the heat will gently cook the meat)
6. Serve with bean sprouts, lime wedges, chilli and fresh herbs on a platter in the middle of the table. Traditionally the soup is served with handfuls of these garnishes and everyone helps themselves from the communal plate.All these steps will take you in between 30 to 40 minutes. Once prepared you have a tasty classic and healthy meal suitable for any time of year.
