Olive oil is the elixir of life. It has been with us for centuries and every major culture in this world today uses olive oil in some aspect of their cooking. Olive oil is a documented cholesterol fighter with proven immune system benefits. Olive oil fights cancer, helps promote weight loss, fights heart disease, lowers blood pressure, and is a great source of vitamin E. This recipe is a solid economic winner. It costs almost nothing to make while providing immeasurable health benefits. This is a recipe I love to recommend. Cheap on a cost basis but packed with untold life benefits. You can pair this with a salad and kick it up another notch. I have included a simple recipe for salad dressing at the end of the recipe. Enjoy!Olive Pesto PastaMakes 2 Servings1 tbsp. olive oil
1/2 cup walnut pieces
1 clove garlic, crushed
2 cup torn baby spinach leaves
1 tsp. dried basil 4 oz. whole-wheat spaghetti, cooked
2 tbsp. shredded part-skim mozzarella salt and pepper to taste1. Heat the oil in a nonstick skillet over medium-low heat. Add the nuts and toast them for 3 to 4 minutes, stirring frequently.2. Add the garlic, spinach, basil, salt, and pepper. Cook for 3 to 5 minutes more, turning frequently.3. Toss with the cooked pasta and top with cheese.Calories: 335; Protein: 9g;
